This  is baked in a tin so that the sugars caramelize. The organic sugar is mixed with organic orange zest, and fair trade cinnamon, cardamom, nutmeg and allspice. Pumpkin seeds sit on top of the croissant swirl, baked in with caramel. The photo is of a hazelnut version of this pastry, but we now make it with pumpkin seeds instead.
